Higashi is a broad category of wagashi (traditional Japanese sweets) and is a low-moisture treat made with soybean flour or rice flour, fine sugar, and other ingredients. These materials are packed tightly into kashigata molds and dried to create beautiful designs and shapes. Many of these sweets can be found in wagashi shops and grocery stores still today. This two-panel kashigata mold is carved with the design of four mon (crest symbol for a person/group/business/religious sect). This mold can be used to make sweets or as an eye-catching decorative item.
