Italian opera star Luisa Tetrazzini (1871-1940) made her debut in Florence in 1890, debuted in the U.S. in 1904 and at Covent Garden in 1907. She had a highly polished mastery of her art as a coloratura soprano, with a sensational command of the most difficult and florid music. She was also witty and good-natured, with a flair for fun that made her splendid in comedic roles. Tetrazzini, who sang notably in Rigoletto and La Traviata, was the inspiration for Chicken Tetrazzini, created by Chef George Auguste Escoffier of The Savoy in London. The year she signed this sentiment, Oscar Hammerstein's Manhattan Opera Company upstaged the Metropolitan Opera by signing the new star first. She would not perform with the Met until 1911.
