We continuously grow and dry fresh batches, so while the strain may be historic, you're not receiving a powder that's hundreds of years old! This continuous renewal and our fine pulverization of the powder means your starter will hydrate and bounce back quickly after some feedings. Buyers will receive 5 grams of dehydrated starter which will grow and replicate indefinitely when fed and cared for. Buyers will also receive detailed instructions on starter rehydration as well as a basic sourdough bread recipe. Our starter is extremely active and regularly quadruples in size when fed.
