Traditional Ceylon Pittu/ Puttu Maker 3 in 1 How to make Pittu/ Puttu If you are like to make pittu follow these instructions. Ingredients 8 cups of rice flour 5 cups desiccated coconut 1 (15oz) can coconut milk 1 can hot water (use the coconut milk can measure) 2 tablespoon salt Method Place the dried coconut in a bowl and pour coconut milk over it with hot water. Mix well and leave to soak the coconut for 20-30 minutes. Sift the rice flour and salt together. Set up the hot water steamer and bring the steamer to a boil before you see the steam come from the top of the steamer. Take a cup of sifted rice flour/salt mixture in a fresh bowl and blend with a 2/3 cup soaked coconut mixture. Using your fingertips to make the "crumble texture" Take the steamer tube and position the section separating the portion of the tube from the portion of the steamer. It is the little metal circle that has holes in the picture shown here. These holes allow the steam to go up through the mixture of pittu and steam it into a tube altogether. Then fill the tube with the mixture of rice flour and coconut with a dry crumble until you hit the end. Place the lid on the tube of the steamer and back on the boiling water-filled base. Steam pittu for 5 minutes until you see steam coming out of the top of the pittu steamer. Then allow it to steam for about 1-2 more minutes. That means the steam has worked its way through all the pittu ingredients and steamed everything together. Take the pittu tube off the base and use a wooden dowel/pole to push the pittu out of the steamer. Repeat until all the mixture is used and you have cooked your pittu.
